<p>Coffee is older than most people think &#8211; archaeological evidence suggests that humans were enjoying the taste of the coffee berry around a hundred thousand years ago. One legend has it that a goat herder in Ethiopia observed his goats eating coffee berries and he decided to taste them himself &#8211; noting the stimulating effect. Shepherds consumed the coffee by grounding the beans and mixing them with animal fat.</p>
<p>&#13;</p>
<p>By around 600 AD, the coffee bean had made its way to what is now the country of Yemen, where it has been cultivated ever since. From 1000 AD, Arabian traders grew and cultivated the coffee bean on plantations &#8211; they called their new concoction qahwa meaning &#8220;that which prevents sleep&#8221;. Arabia controlled the coffee trade for many centuries as they introduced a law that prohibited the exporting of beans that could germinate. </p>
<p>&#13;</p>
<p>Despite this restriction, the coffee bean somehow found its way throughout the Middle East &#8211; to Persia (now Iran), Egypt and parts of Northern Africa. Coffee beans also found their way to the Mysore area of India &#8211; where descendants of those original plants flourished until the early 20th century. In many cases, the beans were literally smuggled out of Arabia.</p>
<p>&#13;</p>
<p>At first, coffee was not enjoyed for its taste, but more as a supplement or source of nutrition. When the coffee bean found its way to Turkey, the Turks began to drink it for its flavor &#8211; frequently adding such things as cinnamon or anise. The Turks were also the first to roast the beans over fires and boil the crushed beans in water. And what is generally considered to be the world&#8217;s first coffee shop was opened in Istanbul &#8211; known as Constantinople at the time &#8211; in the 15th century.</p>

<p>The Dutch were the first to transport and cultivate coffee beans on a commercial basis. With coffee beans smuggled out of Arabia, they established plantations in Ceylon and one of their colonies &#8211; Java. Today, Indonesia is the world&#8217;s third largest producer of coffee.</p>

<p>The coffee bean was introduced to Europe during the 17th century. At one point, the beverage was more popular than tea in England and was used as an antidote to the widespread alcoholism of the time. Coffee houses sprang up in such places as Vienna, Paris and London, frequented by the wealthy and fashionable. The Austrians are credited with the practice of adding milk and sugar to coffee.</p>
<p>&#13;</p>
<p>In France, Louis XIV built greenhouses to protect his precious coffee beans from frost. And in the New World, coffee was also a popular drink &#8211; the newly formed American colonies declared coffee to be the national drink. Not everybody approved; the Catholics declared coffee should be banned &#8211; despite the Pope confessing to being an avid coffee drinker.</p>
<p>&#13;</p>
<p>Today, there are actually more than 60 varieties of coffee in the world, although the beans used for coffee are one of two types &#8211; Robusta and Arabica. Around 75% of coffee beans produced are Arabica and are cultivated in Brazil and Central America. Robusta beans produce a stronger blend of coffee and are cultivated in parts of Asia and Africa as well as Brazil.</p>
<p>&#13;</p>
<p>Chances are high that your coffee beans come from Brazil, the world&#8217;s largest producer of coffee. Brazil produces almost 30% of the world&#8217;s coffee and also has some of the most advanced processing techniques in the world. In 2006, the gross value of coffee production in Brazil was almost 5 billion dollars and the industry employs several million workers.</p>
<p>&#13;</p>
<p>Coffee isn&#8217;t usually associated with Asia, but several Asian countries have started to cultivate the coffee bean. In recent years, Vietnam has become a large producer and some of the African coffee producing countries still produce excellent coffee &#8211; in particular Kenya and Tanzania</p>

<p>Some countries have also started to cultivate specialized coffee beans &#8211; Kenya produces a fruity coffee and Indonesia produces the Kopi Luwak &#8211; a coffee bean that has been passed through the digestive system of a civet. And Ethiopia &#8211; where the coffee bean was perhaps first discovered &#8211; is home to a bean that produces a coffee flavored with chocolate, ginger and orange.</p>

<p>Bar cookies are so easy.  You don&#8217;t have to deal with individual cookies or decorate baked cookies.  You can take them to picnics, parties, the office, family reunions, church socials, etc right in the pan you baked them in.  And the best part?  They are delicious!  Here are two recipes for you to try the next time you want to make cookies.  Try either of them or both; it may be hard to decide between Coffee Bar Cookies and  Honey Lemon Bars.</p>
<p>COFFEE BAR COOKIES<br /> <br />1 cup brown sugar, firmly packed<br />1/2 cup solid shortening<br />1 egg<br />1/2 cup hot coffee<br />1 3/4 cups all-purpose flour<br />1/2 tsp baking soda<br />1/2 tsp salt<br />1/2 tsp baking powder<br />1 tsp vanilla extract<br />1 small pkg chocolate chips<br />1/2 cup nuts, chopped (walnuts recommended)</p>
<p>Preheat oven to 375 degrees. Spray a 9 x13-inch baking pan with nonstick cooking spray; set aside.</p>
<p>In a large mixing bowl cream the brown sugar and frosting together until creamy. Add the egg and coffee; mix well. Sift together the flour, baking soda, salt, and baking powder; add to the sugar mixture. Stir in the vanilla, chocolate chips and walnuts. Place in the prepared baking pan. Bake for 20 minutes or until firm. Drizzle with a powdered sugar drizzle if desired.</p>
<p>HONEY LEMON BARS<br /> <br />1/2 cup butter, softened<br />1/4 cup powdered sugar<br />1 cup + 1 tbsp all-purpose flour, divided<br />3/4 cup honey<br />1/2 cup lemon juice<br />3 eggs<br />1 tsp grated lemon rind<br />1/2 tsp baking powder</p>
<p>Preheat oven to 350 degrees.</p>
<p>In a medium mixing bowl cream together the butter and powdered sugar until light and fluffy. Add the 1 cup of flour; mix until combined. Press the mixture onto the bottom of a 9-inch square baking pan, pressing out evenly to make a crust. Bake for 20 minutes or until lightly browned at 350 degrees.</p>
<p>While the crust is baking, in a medium mixing bowl, whisk together the 1 tablespoon of flour, baking powder, honey, lemon juice, eggs, and lemon rind until thoroughly combined. Pour the mixture over the baked crust; bake another 20 minutes or until the filling is set. Allow to cool in pan before cutting to serve.</p>

Its cost effectiveness and socially responsibility are the reasons that organic fair trade and organic shade grown coffee go shoulder to shoulder with each other. Because of the dangerous consequences of exposure or ingestion of pesticides many people are turning to organic coffee to aid in optimal health without the worry of the long term side effects to subtle pesticide exposure. </p>
<p>When you drink coffee that is certified as 100% organic, it will provide you with a variety of antioxidants. One of the main payoffs to drinking coffee that is full of antioxidants is that it can protect your cells from damage to prevent disease and premature aging. Other benefits from organic coffee include replenishing and maintaining fertile soil without the help of fertilizers. This helps to lower the toxins in the air, soil, and water supply. It also helps to build a better biological system with diversity in crops and production of plants and trees.  Having a certified organic coffee product in your home is safer, but it also implies that growing the coffee has occurred without use of chemical based pesticides or fertilizers. </p>

<p><i>Answer by lindajune</i><br/>Organic foods are produced according to certain production standards, meaning they are grown without the use of conventional pesticides, artificial fertilizers, human waste, or sewage sludge, and that they were processed without ionizing radiation or food additives.</p>
<p>Organic coffee is more expensive than non-organic, but the difference in price (depending on your location) is not that much (in my area of Toronto Canada the difference is about 15% higher for organic).</p>
<p>Health benefits are the same as for other organic products &#8211; you aren&#8217;t putting chemical toxins into your body.  Pesticides and herbicides have been tentatively linked to long-term health issues such as liver disease, kidney disease, and birth defects.<br />
However, a 2002 analysis of all past organic food studies found no proof that organic food offers greater nutritional values, more consumer safety or any distinguishable difference in taste.</p>
<p>For some people, organic foods taste better.  And many have simply made the decision to reduce toxins in their bodies where possible.</p>

<p>Coffee once an exotic drink has now become a common drink and a vital part of many people&#8217;s day. If you have graduated from merely viewing coffee as a caffeine fix to a rich and complex drink then you will want to learn more about the beans that go into making your daily cup of Joe. Well the first fact you will learn that the precious beans that make your daily brew is in fact a seed and not a bean at all.</p>
<p>&#13;Location, Location, Location</p>
<p>&#13;When it comes to choosing your favorite coffee beans it all comes down to where the coffee beans were grown. Generally beans can be classified into either the Arabica or Robusta species of bean. However you will see that most coffee comes labeled according to where it was grown.</p>
<p>&#13;This is because the soil, environment, and climate all influence the taste of the coffee at the end of the day. You will find that the Robusta variety is more commonly available and may also be cheaper. If you would like to taste some of the finer beans then you will want to buy Arabica for your next cup of coffee.</p>
<p>&#13;The Roast</p>
<p>&#13;Equally important to the location and the quality of the coffee beans you buy is the type of roasting process the beans undergo. Different types of roasts determine the flavor and intensity of the coffee. If your taste buds do not like the stronger coffees then look for an American roast. This is a nice middle ground to start appreciating coffee. This type of roast produces a medium bodied coffee and is found in most homes across America.</p>
<p>&#13;If you are feeling adventurous and would like to venture into the world of more full bodied roasts then look for Brazilian roast beans. This is a darker bean than the American and has a fuller flavor. If the Brazilian roast is still not strong enough for you then you can try beans that have been French roasted.</p>
<p>&#13;The first thing you will notice when buying French roast beans is the color, a French roasted bean will have a color that is similar dark chocolate. When you make coffee with this type of bean you will see a little of the bean oil on the surface of your drink, this is perfectly normal and means that you have bought well roasted beans.</p>
<p>&#13;When you have graduated to a true coffee connoisseur then you will appreciate the Espresso roast. The espresso roast will have a very distinct flavor and some people can&#8217;t handle the taste. This comes from the roasting process where the beans are nearly burnt. Espresso is usually served in small cups because it produces very strong coffee.</p>
<p>&#13;Drinks</p>
<p>&#13;The way your coffee beans are prepared will also determine the taste and flavor of the coffee. This is an important step and there are now many ways to enjoy your favorite drink. Italian coffees have become very popular and most restaurants and cafes will serve coffee this way, whether cappuccinos, lattes, or macchiato.</p>
<p>&#13;Storing Beans</p>
<p>&#13;If you have gone to the trouble of selecting the right bean for you and your taste buds then it would be a shame to waste the precious beans with bad storage. Whenever possible you should buy whole roasted beans. You can buy whole beans in bulk and freeze what you cannot use immediately for months.</p>
<p>&#13;On the other hand you will only be able to keep ground coffee beans for a few weeks in an airtight container. So to prolong the life of quality beans make sure to put off grinding until you actually want to drink the coffee.</p>

There are 10 different species of Coffea bush, the first of which was discovered in Ethiopia some thousands of years ago. Once man discovered the coffee bean, its cultivation and use spread to the Middle East, Europe, Asia and beyond. Today, much of the coffee we drink is made from beans that were grown in Latin America, Western Africa, Indonesia and the Philippines, and continental southeastern Asia. Two species of coffee bean &#8212; Coffea Arabica and Canephora &#8212; constitute more than 90 percent of the coffee beans sold on the international market. Depending on the region, species of coffee, roasting, and preparation, coffee beans can infuse a cup of coffee with a variety of flavors and textures.</p>

<p>The seeds of the Coffea Arabica bush are grown all over the world and account for 75% of the coffee beans we use to make our hot beverages. Arabica beans are very flavorful and contain less caffeine than Canephora beans. Coffea Arabica bushes are grown principally in Western Africa and Latin America. Different regions of these countries are known for producing a different type of coffee bean; that is, a coffee bean lending a different flavor when brewed. These different region types are called varietals. The climate, soil, weather, and particular plants and seeds give regions their distinctive coffee bean tastes. In Africa, Arabica bean cultivation can be found in Ethiopia, Kenya, Tanzania, and the northern Muslim countries, among others. Ethiopian coffee beans have an easy, smooth flavor and are delightfully accented by floral notes. Kenyan coffees are also smooth, but a bit tartier than Ethiopian beans. They have a pleasantly fruity aftertaste, as does coffee brewed from Tanzanian beans. These beans are a lovely afternoon coffee, with a milder texture and flavor than its northern counterparts.</p>

<p>A great variety of coffee bean flavors come from Latin America. Coffee beans grown in Brazil lend coffee a slightly bitter cocoa flavor with rich nutty undertones. A favorite of many, Columbian coffee is very rich and bold, a great morning coffee, with a thick, dark texture and a walnut finish. Costa Rican coffee beans are similar to Brazilian, but have a lighter, sharper, almost tangy flavor. Mexico is also a great producer of coffee beans. The beans here vary in flavor and texture, from dry and light to thicker and deeper in complexion and flavor. Although many of the beans grown in Latin America are of the Arabica variety, some regions grow Canephora bushes. The seeds of the Coffea Canephora bush have fewer oils &#8212; and in lesser quantities &#8212; than Arabica beans do. Less oil and higher acidity give coffees brewed from these beans a slightly more bitter quality. Despite this, Canephora is still a very popular coffee bean, used worldwide in cheap, canned coffee blends and expensive espresso roasts. Canephora beans typically have almost 50% more caffeine than Arabica beans.</p>

<p>Canephora beans are more widely cultivated in Asia than Arabica. These varietals are known for having a more acidic and bitter, although not unpleasant, flavor. Most of the coffee beans we use come from island nations in Asia, such as Sumatra and the island of Komodo. Coffees brewed from these regional beans have a full texture and a slightly acrid, herbal flavor. Java and Kona varietals are especially popular and make a wonderful morning coffee due to their earthy, almost stringent quality.</p>

<p>Other factors that influence the taste of a coffee bean or cup of coffee are roasting methods and final preparation. As a rule of thumb, the greater the amount of time spent roasting, the darker, more full-bodied, and flavorful a coffee will be. Although coffee beans lose essential oils &#8212; and caffeine &#8212; during roasting, they change chemically during the roasting process, and acquire new, different and flavorful oils. The darkest roast is known as Italian, which is preceded by French, Full City, City, American, and other, lighter coffee roasts. French roasts are used to make espresso, because they have a high oil content and low acidity. City roast is common in western United States, and American roast is synonymous with eastern cities, including New York and Boston. These coffees are often produced using the drip method. Some people opt for a French press, the use of which results in a stronger flavor and oily texture. Using an espresso machine to brew coffee also lends the coffee a strong flavor, as well as higher caffeine content.</p>

<p><strong>The Essentials of Making Great Coffee</strong></p>
<p> Use high-quality coffee, preferably recently roasted and ground just before serving.  Always use the correct grind for the method. If your coffee is too bitter and muddy, the grind is too fine; if the brew lacks flavor, the grind is too coarse.  Always use freshly drawn cold water.  Never guess amounts. Use the correct proportion of coffee and water (two level tablespoons per six ounces cold water for regular-strength coffee), preferably measuring both. I f coffee is too strong or weak, change grind and/or blend, not proportion of coffee to water.  Make sure the coffee maker is scrupulously clean and thoroughly rinsed. Coffee quickly picks up off-flavors during the brewing process.  For best results, always brew at least three-fourths of the coffee maker&#8217;s capacity. Most large coffee makers do not make one or two cups satisfactorily.  Never guess when timing. Use the clock.  Remove the grounds from the brew as soon as the brew cycle is completed to prevent bitterness. Also for that reason, never rewet grounds.  Serve coffee immediately after brewing. (With drip methods, stir the brew before serving.) Coffee is at its best when just brewed.  If coffee must be kept warm, try to hold it at 180 degrees to 190 degrees farenheight. Brewed coffee stays palatable for twenty minutes, drink able for one hour maximum. The longer it is held, the less desirable it becomes.  Never reheat cooled coffee; it breaks down in flavor. Never allow the brew to boil; its flavor turns bitter.
<p><strong>Coffee 101:</strong></p>
<p>    <strong>Q. What&#8217;s the difference between specialty coffee and why does it cost more than regular coffee?</strong> <br /><strong>A. </strong>Specialty coffee is a different species of coffee called Arabica. Arabica beans are picked and processed by hand, then freshly roasted to ensure consistent top quality. As a result of the special care and time required to harvest and process Arabica beans, the coffee is more expensive than the lower quality commercial beans. Commercial-grade coffee is usually machine picked and processed, and made from lower grades of coffee called Robusta.</p>
<p><strong>Q. What&#8217;s the difference between French Roast and regular coffee?</strong> <br /><strong>A. </strong>French Roast is a particular style of dark roasting that results in a dark , oily bean. French Roast is stronger and more flavorful than regular coffee.</p>
<p><strong>Q. Which coffees have the least amount of caffeine?</strong> <br /><strong>A. </strong>Dark roast have less caffeine than light roast. That&#8217;s because as coffee beans are heated at high temperatures, the caffeine evaporates. The longer the beans are roasted, the less caffeine they have (although the difference in caffeine content between roast is relatively slight). I f you want to cut down on your caffeine consumption but don&#8217;t like the taste of decaffeinated coffee, try a dark brew. Or try a split shot espresso drink or a half decaf/half regular brewed coffee. <strong>NOTE:</strong> Arabica beans contain approximately half the caffeine of the lower-grade commercial coffees made from Robusta beans.</p>
<p><strong>Q. Is drinking decaffeinated coffee harmful to your health?</strong> <br /><strong>A. </strong>There is no proven health risk associated with drinking decaf coffee. Methylene chloride, the chemical used to decaffeinate coffee, vaporizes at 104 degrees Fahrenheit. Since temperatures in the roaster reach in excess of 400 degrees Fahrenheit for several minutes, it is safe to assume that any residue burns off during this process. If you&#8217;re still concerned, you can order a Swiss Water Process decaf, which is not treated with any chemicals.</p>
<p><strong>Q. Is coffee fattening?</strong> <br /><strong>A. </strong>Coffee is 98% water and therefore has virtually no calories. Calories and fat come from the sugar and milk you add.</p>
<p><strong>Q. How is coffee harvested and processed?</strong> <br /><strong>A. </strong>Coffee trees produce fruit known as coffee cherries. Inside the sweet, gummy pulp of each cherry are two flat, green coffee beans that lay against each other. Once the coffee cherries have been picked, the outer hull of the fruit must be removed to get to the beans. There are two methods used to extract the beans: the wet method and the dry method. The wet method requires a large supply of fresh water. A machine strips away the outer layers of skin and cherry, leaving the beans enclosed in a sticky inner pulp. The beans then are soaked for 24 to 72 hours in fermentation tanks to remove any remaining pulp. Coffees processed through the dry method generally have lower acidity and deeper, more complex flavors.</p>
<p><strong>Q. How is coffee roasted?</strong> <br /><strong>A. </strong>Roasting is a fine art, requiring a delicate hand, split-second timing and an ability to judge when the coffee bean is at its peak of flavor. First, the roaster drops the green beans into a drum filled with hot air, causing the temperature inside the drum to drop. Then the roaster heats the beans until the water in the beans begins to steam, making the beans swell and audibly pop. The heat causes complex polysaccharides to break down into starches and then sugars, which caramelize. Aromatic oils within the beans boil to the surface, giving them an oily appearance. The expansion of oils causes a second audible &#8220;crack&#8221;. Along the way, the beans darken from their original green to a rich chestnut brown. The longer the beans are roasted, the darker they become. Roasts are classified as light, medium, dark and darkest. Despite the current vogue for dark roast, they are not necessarily better. Some single origins are better suited to a light or medium roast.</p>
